Fanfare: Rescued food gets makeover for Sunday Supper benefitting 412 Food Rescue
Renowned chefs from across the country. Ten courses ranging from squash panzanella salad to charcoal tempura. All whipped up from rescued food for a Sunday Supper benefitting 412 Food Rescue.
“We came here tonight to support a lovely cause and to eat some really good food,” said Becca Schano with her husband, Ned. “And, I really don’t want to be cooking on a Sunday night.”
Sentiment shared amongst a crowd that required four sprawling tables to be set up within LUXE Creative’s 21,000 sq. foot raw space in the East End.
“We sold out in a couple of weeks without any promotion,” said Leah Lizarondo, who co-founded the organization with Gisele Fetterman. Back in 2015, they came up with an idea: take perfectly good, healthy yet unsellable food that was bound for a landfill and place in into the hands of people who need it the most, thus bridging the gap between supply and access.
Spearheading the Nov. 12 supper were Jamilka Borges of Spoon and Justin Severino of Cure and Morcilla, who challenged seven of the nation’s best to turn average into art.
“It’s an idea that everyone embraced from the start,” said Amy Brandwein, chef and owner of Centrolina in Washington DC, as she seared Ligurian sea bass on an open grill outside. “I think chefs have really big hearts. If you want to cook for other people you tend to have a nurturing spirit.”
Allium and walleye soup, parsnip flan and smoked bluefish, Maine apple pie… dish after dish arrived in a leisurely style, each accompanied by a specialized cocktail to wash it down.
“I wouldn’t mind being back there tonight,” said Dustin Harbison, eyeing the kitchen. “Someone’s got to do it.”
