Mustard brightens appetite and palate
As a condiment or a cooking ingredient, quality mustard brings a strong, bold flavor to any dish.
Roland mustards -- manufactured in Dijon, France -- offer a smooth and grained versions. They're ground from brown mustard seeds, giving it a rich yellow color, satisfyingly thick consistency, and bright flavor.
Here are some tips for cooking with mustard from Rolands:
• When adding mustard to a recipe, be sure to add it near the end of the cooking process. Too much heat will make the mustard flavor weak and bitter.
• Mustard is an essential ingredient in sauces, from hollandaise to reduction sauces.
• Mustard added to a salad dressing will add a dash of spiciness and help to hold an emulsion in the dressing.
• Smooth or grained mustard is a great addition to a marinade for meat or seafood.
• Mustard mixed with herbs, salt and black pepper makes a great rub for roasting meats.
• Mustard works well in compound butters. Soften butter at room temperature, then add chopped garlic, parsley, black pepper, minced shallots and the mustard of choice. Mix well. Spoon onto parchment paper, form into a roll and freeze. Cut into 1/2-inch sections and place over grilled meat or fish.
