October brings an array of fruits and nuts to market, particularly fresh apples.
Each type of apple has its special qualities. Golden Delicious, when cut, stay white longer than other varieties. They also hold their shape when cooked. I use them here in a fresh apple chutney served with pork tenderloin.
You could use Red Delicious, but they will become mushy if overcooked. Macintosh apples won't work in the chutney; they cook down to a sauce very quickly and are best for applesauce. For a speedy apple chutney, I cook diced apple in the microwave for a minute and add them to bottled chutney.
I've given a simple apple chutney recipe if you have time to make your own.
The cinnamon, salt and pepper rub for the pork is a perfect blend of flavors with the apple chutney. Complete this quick autumn dinner with rice tossed with some walnuts, parsley and olive oil.
Spice-rubbed pork would go well with a nice, spicy California pinot noir.
Autumn Spice-Rubbed Pork• 1/2 cup golden delicious apple cut into 1/4-inch cubes
• 1/2 cup bottled chutney
• 3/4 pound pork tenderloin
• 1 teaspoon freshly ground black pepper
• 1 teaspoon ground cinnamon
• 1 teaspoon salt
Heat the broiler. Line a baking tray with foil and place under the broiler.
Place the apple cubes in a microwave-safe bowl and microwave on high fror 30 seconds.
Remove and add the chutney to the apple in the same bowl and toss well. Set aside.
Remove the visible fat from the pork and cut almost in half lengthwise. Open like a book. Mix the black pepper, cinnamon and salt together. Rub the spice mixture onto the pork, making sure all sides are covered.
Remove the tray from broiler and place the pork on the tray. Broil about 5 inches from the heat for 7 minutes, turn and broil for 3 minutes. A meat thermometer should read 160 degrees. Slice and serve with the apple chutney.
Makes 2 servings.

Walnut Rice• Water
• 1/2 cup long-grain white rice
• 1 teaspoon olive oil
• 1 garlic clove, crushed
• 2 tablespoons chopped walnuts
• Salt and freshly ground black pepper, to taste
Bring a large saucepan of water to a boil over high heat. Add the rice and cook for 10 minutes. Remove about 3 tablespoons of water from the rice and mix with the olive oil and garlic. Drain the rice. Toss with the olive oil mixture and walnuts.
Season with salt and pepper.
Makes 2 servings.

Simple Apple Chutney• 2 medium-size golden delicious apples, cored and cubed (2 cups)
• 2 tablespoons sugar
• 1/2 cup red wine
• 2 tablespoons apple cider vinegar
• 3/4 teaspoon ground ginger
• 1/8 teaspoon ground cloves
• 2 tablespoons raisins
Wash the apples, quarter and remove the cores. Cut into 1/2-inch cubes. Place the cubes in a small skillet with the sugar, red wine, vinegar, ginger, cloves and raisins. Bring to a simmer over medium-high heat and lower heat to medium.
Let cook gently for 5 to 6 minutes or until the sauce begins to thicken. Serve with the pork.
