Wings Over Pittsburgh flies high with simplicity

A wing joint that landed in the South Side over the summer is taking off with hungry patrons all over the city.

Wings Over Pittsburgh, on East Carson Street, offers its namesake menu item in a variety of flavors and dry rubs as well as ribs, sandwiches, wraps and combo packs to dine-in and delivery customers.

General manager Matt Harmon says 65 percent of business is delivery, though they do get a lot of late-night walk-ins on the weekends when they're open until 3 a.m. They'll take orders to all the city's universities as far as Shadyside and Greenfield. For those who opt to dine in, there's a handful of two- and four-seaters.

The aeronautical theme carries through the entire eatery, from the name of menu items such as the Puddle Jumper (10 wings, $7.99) to the giant Blue Angel aircraft depicted on the wall.

Sauces include standards like barbecue and honey mustard as well as creative concoctions like sweet-onion barbecue and citrus chipotle. Buffalo style options come in every degree from Wimpy, for those seeking less of a kick, to Afterburner, the hottest version. Dry rubs include Cajun-blackened, Texas mesquite, garlic Parmesan and more.

Wings are sold by weight, not by piece, ranging from the DC-3 (around a half-pound of boneless wings, $6.49) to the Zeppelin (more than 6 pounds, boneless, $58.99). Bone-in options include the Puddle Jumper up to the C-5 Galaxy (120 wings, $69.99).

Combo packs start with the Hangar 1 (a half-pound of wings, fries and a drink for $13.49) and cruise up to the Aircraft Carrier (two full racks of ribs, 60 regular wings, 6 pounds of boneless wings, fries, onion rings, and three 2-liters of soda for $109.99).

For anyone with a hankering for more than wings, there's also ribs ($9.49 to $18.49), sandwiches and wraps (all $6.50) and a Caesar salad ($3.99 for a side, up to $7.99 with chicken). Sides include regular and waffle fries and onion rings.

Harmon says keeping the menu simple makes Wings Over Pittsburgh, which is part of a national chain, stand out.

“There's only a few dedicated wings places around here,” Harmon says. “We just do a few items and sell them really well.”
